Wannabe Healthy Breakfast


I find it hard most days to eat healthy. With work, school, and taking care of my everyday life, I find myself eating the wrong things. We have all heard a million times that breakfast is the most important meal of the day. I understand that eating most of your carbohydrates at the beginning of the day is more beneficial, as you have the rest of the day to burn them off. I'm for breakfast, and I'm for carbs. What I do find important is that I eat lower fat, and get my fruits and vegetables in everyday. (I do love V8. If you have not tried it yet, I highly suggest it!) While pancakes and French toast is awesome, most of us spread too much butter and syrup over them. You can still eat French toast and make it healthy. I tried a healthy version of French toast, cottage cheese, and a yummy smoothie.

Breakfast for 2 -

French Toast Ingredients:
4 pieces of whole grain toast (I prefer Oroweat)
1/2 tbl butter (try Smart Balance...it is better for you)
2 eggs beaten
dash salt & sugar

Heat a non-stick pan to medium heat. Add JUST a dash of salt and sugar to the beaten eggs. Quickly dip each side of each piece of bread into the beaten eggs. Let the excess egg run-off, as you don't want them to be soaked through. Once the pan is heated rub the small amount of butter over the bottom. Add each piece of bread to the pan. Let each side brown, so that the egg is cooked and a bit crispy. Remove from pan. Some great topping alternatives are fresh fruit and non-fat whipped cream (try Reddi-wip, it is delicious).

I love cottage cheese, and it is healthy for you. My favorite (it is worth the higher price) is Knudsen from Kraft Foods. It is a good source of calcium and protein. Once again, cut up fruit is the way to go! Right now peaches and nectarines are delicious...but the season is about over.

We have been very in to smoothies recently. Here is a new one to try:

3 small bananas
1 cup frozen strawberries
1 cup lowfat yogurt (any kind you like)
1 cup lowfat milk
2 tbl honey

Blend and enjoy! My father always made the best smoothies, and he passed on his love for them to me. They are really a healthy great way to enjoy a treat. Get together with your loved ones and enjoy the morning.

This can be a great breakfast on a relaxing Sunday while reading the morning paper. Although I'm not particularly a breakfast person, I do crave French toast every once in awhile. I also have a difficult time eating healthy when my schedule really doesn't permit time for cooking or preparing substantial food. So thanks for sharing a healthy substitute for an otherwise occasional treat. I <3 CARBS!

Wait a minute...is this a football and food blog?!? I'll be back. Again and again. I was at the Lions/Raiders game a few weeks back and saw some serious gourmet cooking going on. I saw this one crew with a whole taco bar or something, it looked so good. I had a pretty damn good linguisa sandwich there, too.

Anyways, I dig the french toast recipe, probably best for the weekend for me, when I'm not buying a banana and coffee at school. And cottage cheese reminds me of my grandma, who I love very much, so thank you for that. Keep up the tasty recipes and play by play.

Breakfast is important. Mine tends to be as follows; 1 glass of grapefruit juice, 1/2 banana, 1 medium coffee and a pastry (see...carbos!) I often have a plain croissant. It is one of the most enjoyable pastries, but also one of the most difficult to make. Rachael Rae won't be whipping them up in a half-an-hour TV show. Apparently, BBC not only stands for British Broadcasting Corporation, but also Bake Better Croissants.

I agree, it's hard trying to eat healthy food everyday. We all have busy lives, and we tend to eat food that are fast and easy to make, which isn't always healthy. I believe trying to keep track of what I eat could help, but it's difficult at times. I understand how you feel, it seems as though there is no time to make sure we are eating healthy food.

I love smoothies too. When I get the chance, I love to go to Jumba Juice and order a Pina Colada smoothie. Have you tried the smoothies on campus? I highly recommend them, they are yummy.

Are you ready for Sunday's game? It's going to be a fun game to watch. Go Niners!

I love breakfast! It is the best meal of the day. When I actually do have time in the mornings, I love making a big breakfast, usually an omelette or scramble with lots of veggies and cheese, and sometimes bacon. It really is important to start your day off right, and there is no better energy than food, especially protein. I love french toast too, I will totally try and use your recipe. It is usually hard for me to steer away from what I already know how to cook, but breakfast rocks, so when I get another free morning, I'll try it out. Thanks!

Mmm, more recipes I must try! Nice post on a focused topic, with good information. (How about the Spicy V-8? Yum!) Your recipe-writing is coming along well; I'd suggest leaving out steps that are very obvious (like "remove from pan" when it's done cooking) just to avoid clutter. It's a tough form of writing, for sure! Good work.

A few bugs to fix:

"get my fruits and vegetables in everyday" (make "everyday" two words for this usage: every day)

"highly suggest" (change to "strongly suggest" or "highly recommend")

pancakes and French toast is awesome (change "is" to "are")

"let the excess egg run off, as you don't want them to be soaked through" ("them" isn't clear; try "don't want the bread to be soaked through")

cut up fruit (hyphenate "cut-up")

tbl (should be tbsp)

Hi Laurel,

First, PLEASE make your e-mail visible on your Blogger profile! Go to "edit profile" and make sure the "show e-mail" box is checked. Then check that, when you look at your profile, it says "Contact" and there is a link that says "email."

For sound to use with Eyespot, you need to upload an mp3 (or other sound file) just like you would upload video. Your audio files will appear in the "music" section of the Eyespot workspace (on the left, where it lists your various media clips, etc.).

You can't do any sound editing in Eyespot; you can only lay down a finished sound file and put video to that. But if you want to make your own recording into an mp3, check out Odeo Studio. You can check out a mic at the BECA Cage.

This is all on the class blog, and Eyespot also has pretty good FAQs (it's intended to be something people figure out and use on their own, not in a classroom), so hopefully you'll be able to do the entire assignment. I'd rather have you use an existing mp3 than try to do your own sound recording and find out that you can't get it done!
